Simple, decadent, and made in just 20 minutes these Chewy Vegan Cookies with a Candy Cane Peppermint twist will quickly become your new go-to!
Cookie Ingredients:
3 Cups Gluten Free Oat Flour
4 Teaspoons Baking Powder
1 Cup Organic Pure Maple Syrup
1 Cup Coconut Butter (melted)
2 Teaspoons Peppermint Extract

Method:
In a large mixing bowl stir the melted Coconut Butter, Maple Syrup, and Peppermint Extract.
Add the Gluten Free Oat Flour & Baking Powder.
Combine well to form a dough.
Add the crushed candy cane and combine.
Roll out the dough about ¼ Inch thick. (it works best to roll it between 2 wax papers, this way they do not stick)
Cut into circles with a cookie cutter or upside down mason jar.
Bake at 350ºF for 12 minutes.
