This Healthy Strawberry Cake is the Ultimate Guilt-Free Treat! It gets its sweetness exclusively from Medjool Dates and Real Strawberries; no added sugars needed here! It is perfectly sweet, moist, & tender - the perfect healthy (yet yummy) dessert!
Ingredients:
1 ½ Cups Medjool Dates (packed)
1 ½ Cups Water
1 ¾ Cups Gluten Free Oat Flour
1 ½ Tablespoons Baking Powder
Frosting
¾ Cup Coconut Butter
¼ Cup Almond Milk (add more milk if the frosting is still too thick)
Optional: 3-4 Tablespoons Maple Syrup or other sweetener of choice
Method:
In a blender or food processor; combine the water and dates, blend until smooth.
Add the rest of the ingredients and blend. (do not over blend)
Add the batter to a prepared round pan and bake at 350°F for 35 minutes.
Remove the pan from the oven and let it cool completely before frosting.
For the frosting, combine all the ingredients in a high speed blender. Blend until very smooth and creamy. Add the frosting and more freeze dried berries all around the cake. Enjoy! tried this recipe? don't forget to drop a comment and photo below!
