This 6-ingredient Key Lime Pie is vegan, completely grain and dairy free, creamy, citrusy, yet perfectly sweet, and 100% irresistible.
Ingredients:
3 Cups Raw, Unsalted Cashews
1 Cup Maple Syrup
3/4 Cup Coconut Oil
1/2 Cup Lime Juice
1/4 Cup Lemon Juice
1 Tablespoon Vanilla Extract
Optional: fresh lime for garnish
Method:
Combine all ingredients in high-speed blender or food processor and blend until smooth.
Place the mixture in a 7'' round spring form pan.
Cover and freeze for 2-3 hours.
