Cookie Ingredients:
½ Cup Medjool Dates (pitted)
½ Cup Cashews
½ Cup Oats
½ Cup Dark Chocolate Chips
1 Tablespoon Maple Syrup
1 Teaspoon Vanilla Extract
Topping Ingredients:
1/2 Cup Dark Chocolate Chips
1/4 Cup Cashews
Method:
Blend the dates and cashews in a food processor, add the rest of the cookie ingredients and pulse.
Using a small cookie scooper, scoop out spoonful's of dough, roll between your palms to form balls, flatten with a fork.
