Banana Blueberry Muffins

With ripe bananas and fresh juicy blueberries, these easy Banana Blueberry Muffins are the perfect breakfast treat. These muffins are Vegan and 100% Egg and Dairy-Free.

Ingredients:

  • 1 Large banana

  • ½ Cup Almond Milk

  • 2 Tablespoons Olive Oil

  • 1 Cup Whole Wheat Flour

  • ⅓ Cup Coconut sugar

  • ½ Teaspoon Baking Powder

  • ½ Teaspoon Baking Soda

  • 1 Cup Fresh Blueberries

Method:

  • Mash the banana in a bowl, add the coconut sugar and olive oil. Mix well.

  • Add the Flour, Baking Powder, Baking Soda, and combine with the banana mixture.

  • Lastly add in the Almond Milk and Blueberries and combine everything well.

  • Add to a muffin pan, and bake at 350°F for 20-25 minutes.

Couldn’t make the banana muffins fast enough! So deliciously moist! we used chocolate chips in place of blueberries because that’s what we had
