This refreshing rice-less cucumber roll makes for a perfect lite snack or appetizer!
1 Large Cucumber
1/2 Red Bell Pepper - cut into thin strips
1/2 Orange Bell Pepper - cut into thin strips
2 Celery Stalks - cut into thin strips
Feel free to add or replace any other vegetables that you like
1 Teaspoon Sesame Seeds
1 Teaspoon Pickled Ginger
Soy Sauce or Liquid Aminos
Wash and dry the cucumber well, cut in half, and scoop out the inside with a spoon or corer.
Stuff each cucumber with the veggie strips ensuring there are no spaces left.
Lay the cucumber flat and cut into medium sized circles.
Sprinkle with Sesame Seeds and enjoy it with your favorite sides, & dipping sauces, I had it with Pickled Ginger, Asian Carrot Dressing, and Braggs Liquid Aminos! tried this recipe? don't forget to drop a comment and photo below!
