Simple Cucumber Sushi Roll

This refreshing rice-less cucumber roll makes for a perfect lite snack or appetizer!

Ingredients:

  • 1 Large Cucumber

  • 1/2 Red Bell Pepper - cut into thin strips

  • 1/2 Orange Bell Pepper - cut into thin strips

  • 2 Celery Stalks - cut into thin strips

  • Feel free to add or replace any other vegetables that you like

  • 1 Teaspoon Sesame Seeds

  • 1 Teaspoon Pickled Ginger

  • Ginger Carrot Dressing for dipping

  • Soy Sauce or Liquid Aminos

Method:

  • Wash and dry the cucumber well, cut in half, and scoop out the inside with a spoon or corer.

  • Stuff each cucumber with the veggie strips ensuring there are no spaces leftover.

  • Lay the cucumber flat and cut into medium sized circles.

  • Sprinkle with Sesame Seeds and enjoy it with your favorite sides, & dipping sauces, I had it with Pickled Ginger, Asian Carrot Dressing, and Braggs Liquid Aminos! tried this recipe? don't forget to drop a comment and photo below!
