Asian Ginger Carrot Dressing

Whenever we go out for Sushi, aside for all the veggie rolls, I ALWAYS get a house salad with the standard Carrot Ginger Dressing.

Today I decided why wait until we go out? Let me try to re-create it. And boy do I love it. Now I can not stop eating it with everything!

Give it a try, it is simple, tasty, & nutritious.



  • Add the carrots and water to a pot and bring to a complete boil, lower the heat and let the carrots sit in the pot until they are fully cooked through and soft.

  • Combine the rest of the ingredients in a blender of your choice. I use a Nutribullet.

  • Once the carrots are soft add them to the Nutribullet and blend until completely smooth. Pause and scrape the sides to ensure everything gets mixed in properly.

  • Don't forget to add Salt, Pepper, & Garlic! (I do add a generous amount of Garlic)
