Whenever we go out for Sushi, aside for all the veggie rolls, I ALWAYS get a house salad with the standard Carrot Ginger Dressing.
Today I decided why wait until we go out? Let me try to re-create it. And boy do I love it. Now I can not stop eating it with everything!
Give it a try, it is simple, tasty, & nutritious.
1 16 oz Bag Baby Carrots
2 Tablespoons Rice Vinegar
1 Tablespoon Liquid Aminos
2 Tablespoons Sesame Oil
1-2 Teaspoons Ground Ginger
Salt, Pepper, & Garlic Powder to taste
Add the carrots and water to a pot and bring to a complete boil, lower the heat and let the carrots sit in the pot until they are fully cooked through and soft.
Combine the rest of the ingredients in a blender of your choice. I use a Nutribullet.
Once the carrots are soft add them to the Nutribullet and blend until completely smooth. Pause and scrape the sides to ensure everything gets mixed in properly.
Don't forget to add Salt, Pepper, & Garlic! (I do add a generous amount of Garlic)
