Savory Carrot Kugel (egg-free)

Move away potatoes and noodles, and make some room for this savory, perfectly seasoned, mouthwatering Carrot Kugel.

Ingredients:

  • 3 Cups Grated Carrots (I use my Food Processor to get the carrots finely grated)

  • 2 Chickpea Eggs (4 Tablespoons Chickpea Flour Combined with 4 Tablespoons Water)

  • 1 Cup Diced Onions

  • 1/2 Cup Olive/Avocado Oil

  • 1/2 Cup Oat Flour

  • 1 Teaspoon Garlic Powder

  • 2 Tablespoons Minced Onion

  • Salt & Pepper to Taste

Method:

  • Combine 4 Tablespoons of Chickpea Flour with 4 Tablespoons of water, set aside.

  • Combine all of the ingredients in a bowl, adding the chickpea mixture last.

  • Mix it all up really well.

  • Add to a greased, 8X8 Square Pan.

  • Bake at 400°F for 1 Hour and 10 Minutes.
