Sorry potatoes and noodles, move away and make some room for this savory, perfectly seasoned, mouthwatering Carrot Kugel.
Ingredients:
3 Cups Grated Carrots (I use my Food Processor to get the carrots finely grated)
2 Chickpea Eggs (4 Tablespoons Chickpea Flour Combined with 4 Tablespoons Water)
1 Cup Diced Onions
1/2 Cup Olive/Avocado Oil
1/2 Cup Oat Flour
1 Teaspoon Garlic Powder
2 Tablespoons Minced Onion
Salt & Pepper to Taste
Method:
Combine 4 Tablespoons of Chickpea Flour with 4 Tablespoons of water, set aside.
Combine all of the ingredients in a bowl, adding the chickpea mixture last.
Mix it all up really well.
Add to a greased, 8X8 Square Pan.
Bake at 400°F for 1 Hour and 10 Minutes.
