A classic Purim Treat without the bad stuff so you can enjoy more than one (or five) without feeling bad!
1/2 Tablespoon Pure Vanilla Extract
1/4 Teaspoon Baking Soda
1/2 Teaspoon Baking Powder
Organic Raspberry Jam for filling
Combine all ingredients in a bowl and mix well.
Place the dough in the fridge for 1-2 hours.
Remove from fridge and roll out the dough, about ¼ inch thick.
Cut out circles with a cookie cutter (or upside down mason jar like I did) gather up scraps, reroll, and cut out additional circles.
Place about 1-2 teaspoons of Raspberry (or other flavor) Jam in the center of each circle.
Fold the sides up to make a triangle, pinching points gently to seal.
Place on a prepared cookie sheet; and bake at 350°F for 20 minutes.
