Raspberry Hamantashen (free of oil, eggs, gluten, grains, & refined sugar)

A classic Purim Treat without the bad stuff so you can enjoy more than one (or five) without feeling bad!

Ingredients:

Method:

  • Combine all ingredients in a bowl and mix well.

  • Place the dough in the fridge for 1-2 hours.

  • Remove from fridge and roll out the dough, about ¼ inch thick.

  • Cut out circles with a cookie cutter (or upside down mason jar like I did) gather up scraps, reroll, and cut out additional circles.

  • Place about 1-2 teaspoons of Raspberry (or other flavor) Jam in the center of each circle.

  • Fold the sides up to make a triangle, pinching points gently to seal.

  • Place on a prepared cookie sheet; and bake at 350°F for 20 minutes.
