A Muffin Loaded with Vitamin C? Sign me up! These Muffins are as delicious and healthy as they look! Cakey, Moist, Fluffy, Citrusy, and absolutely delicious! It is a great way to add healthy minerals and vitamins to your diet without popping boring pills in your mouth! This was rated the most perfect muffin for the current season!
1 ½ Cups Gluten Free Oat Flour
1 ½ Cups Almond Flour
1 Teaspoon Baking Soda
1 Cup Almond Milk Yogurt
½ Cup Liquid Vitamin C (can be substituted with Lemon or Orange Juice)
½ Cup Maple Syrup
2 Tablespoons Ground Flaxseeds + 4 Tablespoons Water
¼ Cup Coconut Butter
2 Tablespoons Maple Syrup
1 Tablespoon Liquid Vitamin C
Splash of Almond Milk (add more as needed)
If you have any Medical Issues please consult with your physician prior to taking Liquid Vitamin C.
Combine the ground flaxseeds and water in a small container or bowl, mix well and set aside.
In a large mixing bowl combine the Oat Flour, Almond Flour, and Baking Soda.
In a separate bowl combine the Vegan Yogurt, Maple Syrup, Liquid Vitamin C, and Flax Egg.
Add the wet to the dry and stir to combine.
Add the mixture to a well greased muffin pan.
Bake at 350ºF for 25-30 Minutes.
Allow ample cooling time before adding the topping.
Mix the topping ingredients very well and apply to the cooled muffins.
