Chickpea Salad Sandwich

This Healthy Chickpea Salad is made with Chickpeas, Crunchy Celery, Bell Pepper, and Extra Creamy Vegan Mayo! It is easily customizable, I layered it with Sweet Potato and Greens but add in anything else you fancy; it is the perfect salad for a sandwich, wrap, or to eat with crackers!

Ingredients

  • 2 Slices Whole Wheat Bread

  • 1/4 Cup Fresh Spinach

  • 1/4 Cup Mashed Sweet Potato (optional)

  • 2 Cups Cooked Chickpeas

  • 1/2 Cup Diced Celery

  • 1/2 Cup Diced Red Bell Pepper

  • 1 Tablespoon Fresh Chopped Dill

  • Salt, Pepper, & Garlic Powder to taste.

Method:

  • Mash the Chickpeas with a potato masher or large fork.

  • Add the Celery, Onion, Red Bell Pepper, Mayo, and Spices.

  • Mix to combine well.
