Avocado Kale Pasta Salad

A delicious pasta salad loaded with healthy greens, chickpea pasta, and fresh tomatoes all covered in a smooth and creamy dressing. It’s perfect on its own, or as a side dish to any dinner!


  • 2 Medium Ripe Avocados

  • 4 Cups Fresh Baby Kale

  • 1/2 Cup Avocado Oil

  • 2-3 Cloves Garlic

  • 1/4 Cup Water

  • Juice of 1 Lemon or Lime

  • Salt & Pepper to taste

  • 4 Cups Cooked & Drained Gluten Free Chickpea Pasta

  • 1/4 Finely Diced Tomatoes

  • 1/4 Cup Fresh Baby Kale


  • Add the Avocado, Kale, Oil, Garlic, Water, & Lemon to a high speed blender or food processor and blend until smooth.

  • Combine with the Cooked Pasta.

  • Add the Diced tomatoes and more baby kale.
