Nori Veggie Rolls

These Veggie Rolls are so easy to put together; they make for a perfect appetizer or snack!


  • 2 Big Romaine Lettuce Leaves

  • ¼ of a Baked Sweet Potato (cut into strips)

  • ½ Red Bell Pepper (cut into strips)

  • ½ Large English Cucumber (cut into strips)

  • ½ Avocado (cut into strips)


  • Place the seaweed on a Parchment paper, Cutting Board, or any Flat Surface.

  • Add the Lettuce Leaf in the Center

  • Add a few Tablespoons of Cauliflower Rice in the center of the Lettuce.

  • Layer the rest of the cut up veggie strips in the order of your choice.

  • Roll the Seaweed Paper tightly and let it sit for 2 minutes.

  • Using a sharp knife, cut the center of the roll.
