This time of the year calls for lots of apples, cinnamon, tea, cozy sweaters, and everything cinnamon. I did say cinnamon twice. on purpose.
Follow along for this flourless, oil-free, egg-free, dairy-free moist, sweet, and healthy apple cake recipe!
1 Medium Red Apple (cut into thin slices)
8 Ounces Unsweetened Apple Sauce
1/2 Cup Apple Juice
1 Tablespoon Apple Cider Vinegar
1/4 Cup Almond Milk
1/3 Cup Maple Syrup
1/2 Tablespoon Vanilla Extract
2 Cups Oat Flour
1/4 Cup Coconut Sugar
3/4 Tablespoon Ground Cinnamon
1 Tablespoon Ground Flaxseeds
1/2 Teaspoon Baking Soda
2 Teaspoons Baking Powder
1/4 Teaspoon Ground Ginger
Combine all ingredients (besides the fresh apples) in a food processor and blend on high speed.
Add the fresh apples in a single layer on the bottom of a round, greased, pan.
Add the apple cake mixture to the pan; and and bake at 350°F for 40 minutes.
