Healthy Apple Cake (oil free)

This time of the year calls for lots of apples, cinnamon, tea, cozy sweaters, and everything cinnamon. I did say cinnamon twice. on purpose.

Ingredients:

  • 1 Medium Red Apple (cut into thin slices)

  • 8 Ounces Unsweetened Apple Sauce

  • 1/2 Cup Apple Juice

  • 1 Tablespoon Apple Cider Vinegar

  • 1/4 Cup Almond Milk

  • 1/3 Cup Maple Syrup

  • 1/2 Tablespoon Vanilla Extract

  • 2 Cups Oat Flour

  • 1/4 Cup Coconut Sugar

  • 3/4 Tablespoon Ground Cinnamon

  • 1 Tablespoon Ground Flaxseeds

  • 1/2 Teaspoon Baking Soda

  • 2 Teaspoons Baking Powder

  • 1/4 Teaspoon Ground Ginger

Method:

  • Combine all ingredients (besides the fresh apples) in a food processor and blend on high speed.

  • Add the fresh apples in a single layer on the bottom of a round, greased, pan.

  • Add the apple cake mixture to the pan; and and bake at 350°F for 40 minutes.
