Crunchy Purple Cabbage Salad

This creamy, crunchy, cabbage salad is absolutely delicious and is packed with flavor! Perfect for summer parties, or even paired with a pita or crackers to make up a light and refreshing lunch.


  • 4 Cups Shredded Purple Cabbage

  • 1/2 Cup Diced Celery

  • 1/2 Cup Diced Onion

  • 1/2 Cup Diced Sour Pickles

  • 1/2 Cup Vegan Mayonnaise

  • 2 Tablespoon Maple Syrup

  • 2 Teaspoon Dijon Mustard

  • Salt, Pepper, Garlic Powder to taste

Optional; toasted pumpkin seeds as a topping.


  • Combine all ingredients in a bowl in no specific order.

  • Mix really well.

  • Add Salt, Pepper, & Garlic to taste.

  • I personally like storing it in the fridge for a couple of hours to let the flavors seep in, you can also eat it right away - either way - it still tastes delicious.
