This creamy, crunchy, cabbage salad is absolutely delicious and is packed with flavor! Perfect for summer parties, or even paired with a pita or crackers to make up a light and refreshing lunch.
4 Cups Shredded Purple Cabbage
1/2 Cup Diced Celery
1/2 Cup Diced Onion
1/2 Cup Diced Sour Pickles
1/2 Cup Vegan Mayonnaise
2 Tablespoon Maple Syrup
2 Teaspoon Dijon Mustard
Salt, Pepper, Garlic Powder to taste
Optional; toasted pumpkin seeds as a topping.
Combine all ingredients in a bowl in no specific order.
Mix really well.
Add Salt, Pepper, & Garlic to taste.
I personally like storing it in the fridge for a couple of hours to let the flavors seep in, you can also eat it right away - either way - it still tastes delicious.
