Ingredients:
6 Medium Russet Potatoes
1 Large Onion
2 Large Organic Pasture Raised Eggs
2 Tablespoons Einkorn Flour
1 Teaspoon Salt
1 Teaspoon Garlic Powder
1/2 Teaspoon Black Pepper
Method:
Start by peeling the potatoes and shredding them in a food processor using the shredder blade.
Transfer the shredded potatoes to a colander and squeeze out as much excess liquid as possible.
chop the onion in the food processor using the regular blade, and then add it to the colander with the potatoes, squeezing out any excess liquid again.
In a large bowl, combine the drained potato and onion mixture with eggs, spices, and flour.
Mix well to combine.
Using a medium-sized ice cream scoop, portion out the mixture onto a prepared cookie sheet lined with parchment paper and sprayed generously with avocado oil.
Flatten each latke slightly to ensure even cooking.
Generously spray the top of each latke with avocado oil spray.
Bake in a preheated oven at 450°F (230°C) for 5-7 minutes per side, or until crispy and golden brown.
Serve the latkes hot with your favorite toppings, such as sour cream, applesauce, or chives. Enjoy!
