Crispy Oven Baked Potato Latkes

Golden, crispy, and irresistibly delicious, these oven-baked potato latkes are a mouthwatering twist on the traditional favorite. With a perfect balance of crunchy exterior and fluffy interior, these latkes are sure to satisfy your cravings. Baked to perfection in the oven, they're a healthier alternative to fried latkes, without sacrificing any of the flavor.

Ingredients:

  • 6 Medium Russet Potatoes

  • 1 Large Onion

  • 2 Large Organic Pasture Raised Eggs

  • 2 Tablespoons Einkorn Flour

  • 1 Teaspoon Salt

  • 1 Teaspoon Garlic Powder

  • 1/2 Teaspoon Black Pepper

  • Avocado Oil Spray

Method:

  • Start by peeling the potatoes and shredding them in a food processor using the shredder blade.

  • Transfer the shredded potatoes to a colander and squeeze out as much excess liquid as possible.

  • chop the onion in the food processor using the regular blade, and then add it to the colander with the potatoes, squeezing out any excess liquid again.

  • In a large bowl, combine the drained potato and onion mixture with eggs, spices, and flour.

  • Mix well to combine.

  • Using a medium-sized ice cream scoop, portion out the mixture onto a prepared cookie sheet lined with parchment paper and sprayed generously with avocado oil.

  • Flatten each latke slightly to ensure even cooking.

  • Generously spray the top of each latke with avocado oil spray.

  • Bake in a preheated oven at 450°F (230°C) for 5-7 minutes per side, or until crispy and golden brown.

  • Serve the latkes hot with your favorite toppings, such as sour cream, applesauce, or chives. Enjoy!
