Cinnamon Ginger Sugar Cookies

These healthy sugar cookies are deliciously soft, with hints of cinnamon, ginger, and vanilla. They contain no eggs, butter, or gluten and are therefore a MUST try this holiday season!

Ingredients:

  • 2 ½ Cups Almond Flour

  • 2 Tablespoons Coconut Sugar

  • 1 Teaspoon Baking Powder

  • 1 Teaspoon Ground Cinnamon

  • ⅛ Teaspoon Ground Ginger

  • ¼ Cup Maple Syrup

  • ¼ Cup Applesauce

  • 1 Teaspoon Vanilla Extract

Method:

  • Add the Almond Flour, Cinnamon, Ginger, Baking Powder, Vanilla, Applesauce and Maple Syrup to a bowl. Mix well.

  • Roll the dough between two parchment sheets and cut into circles using cookie cutters or an upside down mason jar.

  • Dust the tops with coconut sugar.

  • Bake at 350ºF for 15-17 minutes.
