A low calorie, completely customize-able quiche packed with nutritious veggies minus the eggs, dairy, soy, & gluten! I bet you'll be coming back for seconds!
2 Cups Lightly Steamed Veggies of choice. (I used a mix of Broccoli, Cauliflower, Carrots, Zucchini & Summer Squash)
1/2 Cup Sliced Baby Bella Mushrooms
1/2 Cup Chopped Onion
1/2 Cup Chopped Bell Pepper
1 Cup Chickpea Flour
1 Tablespoon Ground Flax Seeds
2 Teaspoons Baking Powder
2 Teaspoons Garlic Powder
1 Teaspoon Smoked Paprika
1 Teaspoon Paprika
1/2 Cup Water
1 Tablespoon Braggs Liquid Aminos
1/2 Teaspoon Liquid Smoke
1 Teaspoon Ketchup
Salt to taste
Optional 1 Tablespoon Oil for sauteing
In a bowl combine the chopped onions, bell peppers, mushroom, and oil if using.
After mixing well saute it in a pan on medium heat; once done set aside. (for the oil-free version use water saute method.)
In a separate bowl combine the chickpea flour, flax seeds, garlic powder, paprika, baking powder, & salt to taste and mix well.
Slowly add the water, liquid aminos, smoke, and ketchup while mixing and combining well. If the batter is not smooth add a bit more water until you have a smooth consistency.
Add the sauteed vegetables to the mixture, add the steamed vegetables to the mixture, make sure it is combined well, don't mix too hard though or you will squash the veggies.
Place it in a greased round pan and bake it at 375°F for 25 minutes. tried this recipe? don't forget to drop a comment and photo below!
