It's snowing here in Philly today, which means let's bake a batch of coconut cookies! These cookies are super moist, cakey, delicious, and so easy to whip up! They obviously contain no eggs, dairy, or gluten and are Kosher for Pesach!
1/2 Cup Coconut Flour
3/4 Cup Coconut Sugar
1/2 Teaspoon Baking Soda
1/4 Cup + 2 Tablespoons Coconut Oil (not melted)
1/2 Cup Applesauce
1/4 Cup + 2 Tablespoons Almond Butter
Preheat oven to 350° Fahrenheit.
Add the Coconut Sugar, Applesauce, Coconut Oil & Nut Butter to a blender or food processor and blend on high speed.
Once everything is combined, add the Coconut Flour and Baking Soda, blend on high speed.
Refrigerate the dough for one hour.
Use a medium cookie scooper to form the balls.
Bake at 350°F for 20 Minutes.
Remove from oven, and let it cool off before topping with dark chocolate and shredded coconut. Enjoy! tried this recipe? don't forget to drop a comment and photo below!
